A delicious quick and simple mid week recipe with ingredients. All for less than £5 per person.
Organic Italian Arborio rice, fresh Chestnut mushrooms, leeks, dried wild mixed mushrooms, vegetarian Parmesan cheese and spinach form the basis for this comforting risotto. It is a vegetarian dish, though could easily be diversified with some bacon or chicken stirred through it.
All the ingredients are supplied apart from the vegetable stock, white wine and butter.
For a limited time only, we'll throw in a 250ml bottle of Extra Virgin Olive oil too.
Serves 2 or 4 people.
