These delicious little mottled slate green and grey lentils hold their shape when cooked. They are high in fibre and protein. Puy, like Champagne, is the protected name of the place in France where the lentils are grown, hence, why the name Puy Type lentil is used above. They are especially delicious as a salad tossed with roasted carrots, sweet potatoes, onions caramelised in red wine vinegar and topped with feta.
