Freekeh is a a cereal food made from unripened wheat that has been roasted and crushed into small pieces, used especially in Middle Eastern cooking. It has a slightly smoky flavour, perfect with seafood and roasted vegetables. Add as an interesting ingredient in salads.
TO COOK: Use approximately 50g per person. First rinse the freekeh in cold water and leave to soak for 5 to 10 minutes. Then add to a pan, cover with approximately 500mls of cold water, add a little salt and bring to the boil. Turn down the heat and simmer for about 15 minutes, then drain.
