A mix of Slippery Jacks, Oyster and Black Mushrooms from France. They make an excellent stock when soaked in boiled water for 10 to 15 minutes to rehydrate. Add the stock to risottos or stews. After soaking, chop the mushrooms and add to omelettes, quiches, stews, risottos etc.
